In reply to Lisa. I almost always used canned tomatoes when making this recipe. BUT, I use whole peeled Roma tomatoes. Whole canned tomatoes break up nicely as they cook, whereas diced tomatoes are processed differently with an additive that preserves the shape of the diced tomato. I enjoy the recipe quite a bit!

Looks delicious on "paper" and the combination of spices yielded a dish that was extremely aromatic. Yet we found the dish to be surprisingly bland even after adding salt. We ended up using a fair bit of hot sauce to coax more flavor because we didn't want to overdo it with the sodium. My memories of eating Cuban dishes in Florida are that the flavors don't exactly pop, like some Mexican cuisines, for example Yucatan. But this one seemed promising. If I make it again I'll up the salt content a bit and perhaps some smoked paprika.
