HelloHello, I’m Melissa. Welcome to my corner of the internet where I share my favorite vegetarian and vegan recipes. I was born in Canada but after many years I now call Spain home. It’s been a long journey from there to here, passing though many countries and continents along the way. That’s why I’ve chosen to classify my recipes by cuisine – some of them traditional, others are vegetarianized versions of traditional dishes, and the rest are loose interpretations resulting from my own crazy experimentation.     August 14, 2019 at 7:20 am Hi Melissa, I made your vegan jambalaya with brown rice which was delicious but I made far too much and as I didn’t want to waste any I froze the leftovers but now am unsure as it contained rice whether it would be ok to eat? Please could you advise? Many thanks

      August 14, 2019 at 4:31 pm If it was in an airtight container and didn't get freezer burn, I think it should be fine :).
