Desde entonces, he estado so\u00f1ando con todas las posiblidades que me ofrecen estas fabulosas setas. La receta que tengo aqu\u00ed est\u00e1 inspirada en un cap\u00edtulo de Masterchef Canada. Fue una prueba donde deb\u00edan preparar una pizza, y uno de los concursantes present\u00f3 su pizza \u00a8fun-guy\u00a8que consist\u00eda en una salsa de duxelles de portabello cubierta con una mezcla de setas asi\u00e1ticas, y decorada con r\u00facula y un aderezo de bals\u00e1mico blanco. Se puede detener la cocci\u00f3n aqu\u00ed o se puede a\u00f1adir vermouth, jerez u \u00a0oporto al final para darle una dimensi\u00f3n m\u00e1s de sabor. Como no puedo conseguir portobellos en el supermercado de mi barrio he usado champi\u00f1ones y el resultado es excelente de todos modos. Pochar los chalotes y luego a\u00f1adir los champi\u00f1ones y bajair a fuego lento. Cocinar removiendo de vez en cuando, hasta que el zumo de los champi\u00f1ones haya evaporado y haya formado una pasta espesa \u2013 alrededor de 45 minutos. A\u00f1adir sal y pimienta al gusto. Seguidamente a\u00f1adir el alcohol y dejar cocinar hasta evaporar. A\u00f1adir la cucharada de mantquilla restante y mezclar bien. Retirar del fuego y dejar reposar.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Para la pizza<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-8172-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Primero preparar la reducci\u00f3n de bals\u00e1mico. Llevar a ebullaci\u00f3n 115 ml de vinagre bals\u00e1mico, luego bajar a fuego lento y dejar cocinar hasta reducir y espesar. Est\u00e1 terminado cuando se puede cubrir el dorso de una cuchara con una capa de vinagre. Retirar del fuego y dejar enfriar. Cubrirla con una capa de salsa duxelles. Luego repartir las rodajas de mozzarella y finalemente esparcir las setas sobre la pizza.
