Las dos sopas tienen su origen en Andaluc\u00eda, pero aunque el gazpacho es bien conocido fuera de Espa\u00f1a, el salmorejo a\u00fan no ha ganado mucha fama m\u00e1s alla de sus fronteras. Es una l\u00e1stima porque es m\u00e1s espeso, apetitoso y profundo en sabor que su c\u00e9lebre primo y es mucho m\u00e1s delicioso (en mi opini\u00f3n). Mientras que el gazpacho es una combinaci\u00f3n de tomate, pimiento, pepino, pan, aceite de oliva y vinagre; el salmorejo es m\u00e1s sencillo y consiste en s\u00f3lo tomate, pan, aceite de oliva, ajo y vinagre.<\/p>\n<p>Como en todas las recetas donde los ingredientes est\u00e1n crudos, la calidad de los ingredientes que eliges es lo m\u00e1s importante y marcar\u00e1 la diferencia entre un salmorejo exceptional y uno mediocre. El\u00edge los tomates m\u00e1s maduros y un aceite de oliva virgen, de buena calidad, que tenga un sabor suave. Algunos aceites de oliva tienen bastante sabor a pimiento y en este plato ser\u00edan demasiado fuertes para el equilibrio de sabores delicados. Puedes ajustar la consistencia a tu gusto: si te parece demasiado espeso puedes a\u00f1adir un poco m\u00e1s de aceite de oliva o agua, si te parece demasiado aguado (probablemente no ser\u00e1 el caso) puedes a\u00f1adir un poco m\u00e1s de pan. Tradicionalmente el salmorejo lleva huevo duro y jam\u00f3n serrano de decoraci\u00f3n, pero existen variaci\u00f3nes y no hay reglas fijas. He hecho el m\u00edo vegetariano reemplazando el jam\u00f3n por pimiento morr\u00f3n.
