Aunque su preparaci\u00f3n puede ser algo tediosa, personalmente confieso que me gusta el trabajo delicado de enrollarlos uno a uno. Es una manera de canalizar mi perfeccionismo cuando intento enrollar cada uno id\u00e9nticamente al anterior. Si no tienes tanta paciencia, siempre puedes reclutar un pinche! Los rollitos de primavera existen en una gran variedad de formas por toda Asia y hay un sinf\u00edn de posibilidades en cuanto a ingredientes y sabores. Es un plato perfecto para empezar a experimentar con tus propias combinaciones de sabores. Y luego est\u00e1 la salsa, de nuevo un sinf\u00edn de variedades, pero a nosotros nos gusta una salsa agripicante y la salsa de soja y arroz de vinagre incluida en esta receta. Eso es porque la receta que usaba no ten\u00eda ni consejos \u00fatiles ni instrucciones para la t\u00e9cnica de enrollar \u00f3ptimamente. O se romp\u00eda la masa cuando enrollaba los rollitos o explotaban al fre\u00edrse. Fue entonces cuando pens\u00e9 en adentrarme m\u00e1s en el tema y estas son las conclusiones a las que llegu\u00e9:<\/p>\n<p>1. Despu\u00e9s de preparar el relleno d\u00e9jalo enfriar por completo. Esto es para evitar rollitos mojados. Adem\u00e1s, levanta un lado de la bandeja para escurrir el l\u00edquido. Esto es para evitar que el l\u00edquido de las verduras se convierta en vapor y rompa el rollito.<\/p>\n<p>2. Se compra la masa en diferentes tama\u00f1os y cantidades. Yo uso unas que miden 21.5 cm cuadrados y vienen en un paquete de 20. Se puede comprar la masa en supermercados asi\u00e1ticos, yo en Barcelona las compro en Dong Fang c\/Balmes 6. Una vez abierto el paquete, cubrir la masa con una toalla h\u00fameda para evitar que se sequen y se rompan.<\/p>\n<p>3. Poner s\u00f3lo una peque\u00f1a cantidad de relleno en el rollito y enrollarlo con cuidado pero tan apretado como sea posible. Los rollitos sueltos dejan entrar el aceite dando como resultado un rollito mojado. Tener cuidado de no romper la masa ya que sino tambi\u00e9n acabaremos teniendo un rollito mojado.<\/p>\n<p>4. Es mejor servir tus rollitos acabados de fre\u00edr. Si quieres congelarlos para fre\u00edr otro d\u00eda pon un pedazo de papel para hornear entre las capas o pisos de rollitos para que no se peguen.
