Como soy tan adicta a las patatas, solemos pedir patatas bravas cuando salimos de tapas, lo que es casi cada semana y ya hemos ubicado nuestros bares preferidos, a algunos de los cuales s\u00f3lo vamos por las patatas bravas. Las virutas de manzano se compran en el \u00e1rea de barbacoas de una ferreter\u00eda. Normalmente pongo un par de latas encima de la tapa para juntar mejor las dos partes, aunque se escape un poco de humo igualmente. No he tenido ning\u00fan problema con el humo, la campana hace bien su labor. Pongo el lado de la bandeja con las virutas directamente sobre la vitro a fuego alto hasta que las virutas empiecen a humear y luego reduzco a fuego medio. Nosotros tenemos vitrocer\u00e1mica, no s\u00e9 c\u00f3mo funcionar\u00eda en una cocina de gas; si alguien lo prueba que me lo diga. Mezclar las papas con un poco de aceite de oliva y repartirlas en una bandeja para hornear un una capa. Calentar el aceite en un sart\u00e9n a fuego medio. A\u00f1adir la cebolla y pochar \u2013 alrededor de 5 minutos. A\u00f1adir el ajo y saltear durante un minuto m\u00e1s hasta que suelte el aroma. Adicionar los tomates y aplastarlos con una cuchara. A\u00f1adir los ingredientes que faltan y dejar cocinar a fuego medio hasta espesar al gusto. Retirar del fuego y dejar enfriar. Colocar la tapa del ahumador y poner el borde del ahumador sobre la vitro a fuego alto hasta prender las virutas y lograr un buen flujo de humo. Introducir las papas a medio hacer en el ahumador y volver a colocar la tapa. Bajar a fuego medio. Si las virutas dejan de humear subir un poquito el fuego. Deber\u00eda salir una humareda continua del ahumador. Si las virutas estan carbonizadas y el humo se detiene por completo, a\u00f1adir virutas nuevas y subir a fuego alto hasta que empiezen a humear de nuevo. Ahumar las papas hasta que est\u00e9n blandas por dentro y ajustar el punto de ahumado al gusto \u2013 entre 30 y 45 minutos.
