Pero esto es s\u00f3lo la punta del iceberg de la variedad de especias y mezclas de especias disponibles.<\/p>\n<p>Durante el verano mi marido y yo viajamos a Canad\u00e1 para visitar a la familia y disfrutar de la tranquilidad. El ruido de la calle fuera de nuestro piso en Barcelona es incesante \u2013 el tr\u00e1fico, la gente en las terrazas emborrach\u00e1ndose, las puertas cerrando de un golpe y gente gritando sin motivo (mientras escribo escucho una mujer gritando \u201c\u00a1Mam\u00e1! \u00a1Qu\u00e9 no, qu\u00e9 no! \u00a1Qu\u00e9 pesada que eres!\u201d El contraste entre este ruido ambiental constante y el silencio del Noroeste Pac\u00edfico es incre\u00edble.<\/p>\n<p>Aparte de disfrutar del silencio, una de mis cosas preferidas para hacer en Vancouver es visitar el mercado punjab\u00ed. El mercado punjab\u00ed no es un verdadero mercado, sino un conjunto de locales que se extiende a varias manzanas, habitado y concurrido por la comunidad indo-canadiense de Vancouver. Mi favorito es el Punjabi Food Centre que tiene la selecci\u00f3n de especias m\u00e1s amplia y variada que he visto en mi vida. Tiene literalmente un pasillo entero dedicado a especias. Aunque me considero bien conocedora de las especias podr\u00eda haber cientos de especias en este supermercado que no conozco para nada. Esta es la riqueza y complejidad de la cocina india. Pero aqu\u00ed empezamos con lo m\u00e1s b\u00e1sico: el garam masala.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1448 size-full\" src=\"http:\/\/cilantroandcitronella.com\/wp-content\/uploads\/2015\/09\/garam-masala-ground-spices.jpg\" alt=\"El garam masala es un b\u00e1sico de la cocina india. Primero, cuando compras especias en semillas enteras, se mantienen frescas m\u00e1s tiempo que las especias molidas. Por lo tanto, puedes volver a mezclar m\u00e1s garam masala 6 meses o 1 a\u00f1o despu\u00e9s y estar\u00e1 igual de sabroso. Segundo, la receta para el garam masala es muy flexible y es bien conocido que cada regi\u00f3n y cada familia tiene su propia receta. Por lo tanto, se puede ajustar la proporci\u00f3n de cada ingrediente al gusto. En mi opini\u00f3n, el garam masala no deber\u00eda ser picante ya que siempre se puede a\u00f1adir chili al plato, pero compr\u00e9 unos paquetes de garam masala que se pasaban con el chili eclipsando los sabores delicados que deber\u00edamos degustar, resultando un plato casi incomible. Otro problema es que para reducir el coste, los fabricantes llenan su garam masala con las especias m\u00e1s baratas (como el chili) y escatiman en las especias m\u00e1s caras y sabrosas (como el cardamomo).<\/p>\n<p>Esta receta es la versi\u00f3n de garam masala que tengo en mi cocina en este momento, aunque la voy cambiando con frecuencia probando mezclas diferentes, as\u00ed que
