Algunas quedan insulsas, otras podr\u00edan ser buenas con algunos retoques, y otras son un desastre total. Pero cuando pruebas una receta nueva por primera vez y enseguida le mandas este mensaje a tu marido: \u201cest\u00e1 taaaan rico, ven a probar AHORA MISMO\u201d, sabes que tienes una joya. Esta receta de portobellos en pepitoria es uno de esos diamantes en bruto que me trae de cabeza. Los ingredientes son tan simples que no sospechar\u00edas que juntos pudieran componer una receta tan redonda.<\/p>\n<p>Esta receta est\u00e1 basada en un plato espa\u00f1ol llamado pollo en pepitoria, que consiste en pollo servido en una salsa de los jugos del ave espesada con almendras y yema de huevo. Qu\u00e9 asco, no? Champi\u00f1ones preparados as\u00ed hacen de buen entrante o tapa, y como los dos portobellos que compr\u00e9 en el mercado el otro d\u00eda me costaron \u20ac2.40, normalmente prefiero utilizar champi\u00f1ones o g\u00edrgolas por su valor de mercado. Un ingrediente el cual no se puede escatimar es el fino \u2013 le da al plato ese toque \u201cespa\u00f1ol\u201d tan especial. En Espa\u00f1a una botella de fino es m\u00e1s barata y f\u00e1cil de encontrar que dos portobellos, pero, aunque no vivas aqu\u00ed, no hace falta pagar por una botella de muy buena calidad. Mientras se tuestan, preparar los portobellos quit\u00e1ndoles el tallo y las branquias. Limpiarlos delicadamente y reservar.<\/div><\/li><li id=\"wprm-recipe-8072-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Calentar el aceite en una sart\u00e9n grande a fuego medio. Pochar la cebolla, a\u00f1adir sal. A\u00f1adir dos tercios del ajo, laurel y canela y pochar hasta que suelte el aroma, un minuto. A\u00f1adir el fino y dejar cocer, removiendo, durante 2 minutos hasta que empiece a espesar. A\u00f1adir el caldo de setas y llevar a ebullici\u00f3n. Poner los portobellos en la sart\u00e9n y tapar. Reducir a fuego medio-lento y cocinar los portobellos hasta que est\u00e9n blandos, 10 \u2013 15 minutos, voltear despu\u00e9s de 5 o 7 minutos. Cuando est\u00e9n blandos, retirar los portobellos de la sart\u00e9n y reservar.<\/div><\/li><li id=\"wprm-recipe-8072-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Retirar el laurel de la sart\u00e9n.
