Como ya sabes soy una adicta a las patatas pero tambi\u00e9n siento debilidad por los empalagosos y deliciosos boniatos. Los boniatos son uno de los productos de oto\u00f1o por antonomasia, as\u00ed que ahora es momento para aprovecharse.<\/p>\n<p>Siempre hago el mismo tipo de enchilada: boniato y frijoles negros. Claro que podr\u00edas poner casi cualquier cosa en una enchilada y el resultado ser\u00eda bueno, pero yo siempre me apego a lo que m\u00e1s me gusta. Estas enchiladas son sencillas y sabrosas tan s\u00f3lo utilizando un m\u00ednimo de ingredientes, \u00bfpara qu\u00e9 complicar algo que ya es bueno de por si? Con un toque de aj\u00ed molido en la salsa, estas enchiladas son la candela que necesitas cuando empieza a refrescar.<\/p>\n<p>Una de las mejores cosas que tienen las enchiladas es la salsa. No solamente hay una multitud de posibilidades de relleno, sino tambi\u00e9n hay salsas diferentes entre las cuales hay que elegir: roja, verde o blanca. Cualquiera que elijas, vale la pena hacerla tu mismo. Yo siempre prefiero una salsa a base de tomate, y la receta que he incluido aqu\u00ed es tan f\u00e1cil que ya no hay excusa para volver a comprar una salsa para enchiladas. Son tan buenas que ni te dar\u00e1s cuenta de que falta el queso, pero claro que podr\u00edas salpicarlas con queso o queso vegano si lo deseas. Finalmente, aseg\u00farate de usar tortillas de ma\u00edz en esta receta.
