Es una de esas cosas tan sencillas que jam\u00e1s esperar\u00edas que fuera tan buena. Este plato de calabaza moscada y peras gratinadas es algo as\u00ed como una \u201cdeconstrucci\u00f3n\u201d de dicha crema. Normalmente un plato denominado como gratinado tendr\u00eda encima una capa crujiente formada de una copiosa cantidad de queso y pan rallado. \u00daltimamente, sin embargo, he estado experimentando con frutas del bosque y como transformarlas en productos parecidos a los l\u00e1cteos, pero veganos. Saqu\u00e9 el premio gordo cuando encontr\u00e9 un paquete de un kilo de anacardos crudos en el supermercado asi\u00e1tico \u2013 fue un d\u00eda emocionante (es cierto, no salgo mucho)! Simplemente mojar los anacardos hasta que est\u00e9n blandos y hacer una crema con caldo y levadura nutricional. La levadura nutricional es un ingrediente nuevo para m\u00ed, un ingrediente interesante del cual me voy familiarizando a medida que me muevo cada vez m\u00e1s hacia una dieta vegana. Pens\u00e9 que ten\u00eda un sabor fuerte a queso, pero mi marido no estaba nada convencido de eso. En todo caso, la levadura nutricional puede ser dif\u00edcil de encontrar, as\u00ed que si no dispones de ella, la puedes suprimir y el plato sigue quedando muy rico. Una vez la crema de anacardo est\u00e9 hecha, el resto del plato se prepara f\u00e1cilmente pochando la cebolla y poniendo capas alternadas de cebolla, calabaza moscada y pera en un recipiente y vertiendo la crema encima, dejando que se cuele por grietas y rincones. Se consigue una capa crujiente salpicando con migas de pan y levadura nutricional al final de la cocci\u00f3n. As\u00ed tienes un plato principal sustancioso o por qu\u00e9 no un acompa\u00f1ante para tu pavo de tofu navide\u00f1o. Precalentar el horno a 200\u00b0C. Calentar una sart\u00e9n peque\u00f1a a fuego medio y a\u00f1adir el aceite y la cebolla. Pochar lentamente, a media cocci\u00f3n a\u00f1adir el tomillo y sal y pimienta al gusto. Seguir pochando hasta que las cebollas est\u00e9n transl\u00facidas, retirar del fuego y reservar.<\/div><\/li><li id=\"wprm-recipe-7998-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mientras se pochan las cebollas, preparar la crema de anacardo combinando los anacardos, caldo de verduras, levadura nutricional y \u00bd cucharadita de sal en un procesador de alimentos o licuadora hasta formar una salsa. En un recipiente para hornear de aproximadamente 23 x 15 x 5 cm montar el plato a capas: primero la cebolla, luego la calabaza y finalmente la pera. Repetir las capas en orden hasta llenar el recipiente. Mezclar el pan rayado con las 2 cucharadas de levadura nutricional restantes. Retirar el papel de plata y esparcir la mezcla de pan rayado y levadura. Gratinar durante unos minutos, sin perder de vista. Retirar del horno y dejar reposar durante 10 minutos.
