A\u00fan m\u00e1s: hemos tenido dos botes de pimientos en la despensa desde hace meses sin saber que hacer con ellos. Finalmente encontr\u00e9 la motivaci\u00f3n mientras visionaba un cap\u00edtulo de Top Chef hace unas semanas. El desaf\u00edo de hacer pimientos del piquillo rellenos despert\u00f3 mi inter\u00e9s a trav\u00e9s las posibilidades que ofrecen estas peque\u00f1as joyas rojas. La mayor\u00eda de los concursantes rellenaron sus pimientos con bacalao, aunque tambi\u00e9n se pueden encontrar rellenos de gambas, carne o queso. Quer\u00eda mantener el color blanco del bacalao y dejar resaltar el sabor ahumado. Despu\u00e9s de un poco de ensayo y error, result\u00f3 que lo m\u00e1s sencillo fue lo mejor \u2013 una crema de anacardo b\u00e1sica, sazonada con chalote, ajo, vino blanco y lim\u00f3n y mezclado con un poco de tofu para darle textura. Una sencilla salsa cremosa de tomate le da un toque dulce que marida bien con el sabor ahumado de los pimientos. El resultado es una tapa f\u00e1cil y muy rica servida caliente o fr\u00eda.<\/p>\n<p>La cantidad de pimientos necesarios para esta receta depende de la marca que compres. Algunas marcas ofrecen pimientos grandes y otras marcas pimientos peque\u00f1os o medianos. A\u00f1adir el vino blanco y hervir hasta que el l\u00edquido se evapore. A\u00f1adir la crema de anacardo, tofu, \u00bd cucharadita de sal, pimienta al gusto y jugo de lim\u00f3n. Si la consistencia te parece demasiado l\u00edquida, reducirla durante unos minutos, pero aseg\u00farate de remover constantemente para que no se queme.
