Me imagino a mis lectores espa\u00f1oles diciendo \u201c\u00bfC\u00f3mo? Usa cal\u00e7ots y ya est\u00e1\u2026 y esa salsa no es as\u00ed\u201d. Pues, esta entrada no es para vosotros, los privilegiados que conocen y aman la tradici\u00f3n anual de la cal\u00e7otada.<\/p>\n<p>Esta entrada es para los muy pocos que tuvieron la suerte de viajar a Barcelona al tiempo justo para disfrutar de estas dulces, tiernas cebollitas ahumadas y entonces tuvieron que volver a sus tristes existencias libres de cebollas tiernas en cualquier pa\u00eds del que son oriundos. L\u00e1grimas y violines.<\/p>\n<p>\u00a1Nunca m\u00e1s! Tengo la soluci\u00f3n: \u00a1puerros! \u00a1Yay!<\/p>\n<p>Perm\u00edtame retroceder y explicar un poco acerca de la calcotada con salsa romesco para los no iniciados. Los cal\u00e7ots son un tipo de cebolla, m\u00e1s grande que una cebolleta pero m\u00e1s peque\u00f1o que un puerro, cuya temporada suele ser a finales de invierno. Se ponen en la barbacoa hasta que est\u00e9n carbonizados y luego envueltos en papel de diario para seguir cocin\u00e1ndolos al vapor y enfriarse. Entonces, retiras la piel quemada con un movimiento \u00e1gil y los mojas en una salsa especial.<\/p>\n<p>B\u00e1sicamente, te ensucias mucho. Tus manos se ponen negras por el carb\u00f3n y la salsa se te escapa por el ment\u00f3n. As\u00ed que, \u00bfqu\u00e9 pasa con la salsa? Gen\u00e9ricamente es conocida como romesco pero tal y como me inform\u00f3 mi marido catal\u00e1n (repetida y pesadamente), no es exactamente lo mismo que la salsa cal\u00e7ots. Pero seg\u00fan mis investigaciones, salsa romesco y salsa cal\u00e7ots tienen los mismos ingredientes.<\/p>\n<p>La diferencia ser\u00eda que la salsa cal\u00e7ots es menos espesa para poder mojar con m\u00e1s facilidad. Tambi\u00e9n admiti\u00f3 que usar puerros no result\u00f3 ser un sacrilegio total, as\u00ed que gente espa\u00f1ola: \u00a1no lo rechaces si a\u00fan no lo has probado!<\/p>\n<p><div Salpicar todo con 2 cucharadas de aceite y hornear de 60 a 90 minutos hasta que la piel se empiece a carbonizar pero no a quemar totalmente.
