Todo el proceso de amasar, estirar y cortar la pasta fresca con una m\u00e1quina de pasta me relaja despu\u00e9s de un d\u00eda largo. Y obviamente hacer tu propia pasta te permite soltar la creatividad con las formas y sabores. Por ejemplo esta <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"https:\/\/www.cilantroandcitronella.com\/es\/pasta-fresca-de-remolacha-sin-huevo\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>pasta rosada<\/u><\/a><\/span> que hice hace un tiempo.<\/p>\n<p>Estirar y cortar la pasta a mano, por otro lado, parece ser un trabajo largo y \u00a0arduo. Resulta que nunca puedo estirar la masa lo suficientemente fina, y cortarla me lleva un mont\u00f3n de tiempo. Hizo pasta pici de espinacas en el primer capitulo y como tengo una memoria de pez, tuve que hacerla de inmediato. No s\u00e9 si se le puede discutir algo a Jamie Oliver, pero hice algunos cambios que creo que <em>mejoran<\/em> <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"http:\/\/www.jamieoliver.com\/recipes\/pasta-recipes\/spinach-pici-pasta\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>su receta<\/u><\/a><\/span>.<\/p>\n<p>Primero a\u00f1ad\u00ed harina semolina. Ya intent\u00e9 hacer pasta fresca sin huevo con harina com\u00fan y no se cocin\u00f3 al dente. Tambi\u00e9n, alguien coment\u00f3 en su receta que le qued\u00f3 pastosa y con una textura desagradable, lo mismo que a m\u00ed me parece la pasta hecha s\u00f3lo harina com\u00fan. As\u00ed que un ratio de dos a uno harina com\u00fan con harina semolina funciona perfectamente.<\/p>\n<p>Segundo, en vez de fre\u00edr las verduras, las as\u00e9. Tiene much\u00edsimo m\u00e1s sentido simplemente meterlas en el horno y dejar que se cocinen mientras preparas la pasta. Este paso ahorra mucho tiempo. Finalmente, en vez de una salsa con parmesano, puse un <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"https:\/\/www.cilantroandcitronella.com\/es\/pesto-vegano\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>pesto vegano<\/u><\/a><\/span>, que combina bien con la pasta pici de espinacas y las verduras asadas.<\/p>\n<p>El pesto vegano es muy f\u00e1cil de hacer \u2013 simplemente reemplazar el parmesano por miso, lo que le da el toque umami que esperas de un pesto. Seguro que hace falta m\u00e1s esfuerzo que abrir un paquete de pasta y meterla en el \u00a0agua, pero tendr\u00e1s la satisfacci\u00f3n de haber hecho tu propia pasta a mano. Una vez que entiendes la t\u00e9cnica para darle forma a la pasta, el proceso es bastante r\u00e1pido. A\u00f1adir las harinas y procesar hasta obtener una masa suave. Mi procesador no pod\u00eda hacerlo as\u00ed que termin\u00e9 amasando a mano durante 10 minutos. Si la masa parece seca, a\u00f1adir agua, un cuarto de una cucharadita, y amasar.
