La mayor\u00eda de las recetas b\u00e1sicas llevan patatas (obvio), pimiento verde, cebolla y aceite. Mucho, mucho aceite.<\/p>\n<p>He visto recetas que llevan m\u00e1s de un cuarto de litro de aceite de oliva, as\u00ed que si no vives en un pa\u00eds donde se produce aceite de oliva, estas patatas ser\u00edan m\u00e1s bien patatas a lo rico. O patatas a lo gordo.<\/p>\n<p>Mi interpretaci\u00f3n de patatas a lo pobre es hacerlas <em>casi<\/em> sin aceite. Hago el esfuerzo de reducir mi consumo de aceite despu\u00e9s de haber le\u00eddo <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"http:\/\/amzn.to\/2fagXIw\" target=\"_blank\" rel=\"nofollow noopener noreferrer\"><u>El Estudio de China<\/u><\/a><\/span>.<\/p>\n<p>Los autores recomiendan reducir el consumo de aceites vegetales a\u00f1adidos \u2013 incluyendo el aceite de oliva. Las patatas se suelen fre\u00edr en abundante aceite, pero mi versi\u00f3n va sin aceite, ya que las patatas est\u00e1n cocidas al vapor con caldo de verduras, piment\u00f3n ahumado, vinagre de vino tinto y hierbas frescas.\" width=\"1360\" height=\"2040\" \/><\/p>\n<p>Para acortar una larga historia, el mito de la dieta mediterr\u00e1nea surgi\u00f3 de un estudio en los a\u00f1os 60 que encontr\u00f3 que la gente de la isla de Creta, que consum\u00eda una dieta b\u00e1sicamente vegetariana con peque\u00f1as cantidades de pescado y aceite de oliva, llevaba una dieta excepcionalmente saludable.<\/p>\n<p>Los medios de comunicaci\u00f3n se aferraron a la idea de que el aceite de oliva era muy bueno para el coraz\u00f3n (supongo que es m\u00e1s f\u00e1cil convencer a los consumidores para que cambien el aceite vegetal por el aceite de oliva en vez de convencerles para adoptar una dieta basada en plantas).<\/p>\n<p>Las investigaciones m\u00e1s recientes demuestran que el aceite de oliva no protege el coraz\u00f3n y que la gente de Creta se manten\u00eda saludable gracias a su dieta casi vegetariana <em>a pesar del<\/em> aceite de oliva en vez de <em>gracias a<\/em> ello.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-large wp-image-4514\" src=\"https:\/\/www.cilantroandcitronella.com\/wp-content\/uploads\/2016\/11\/poor-mans-potatoes-photo-12.1-1360x2040.jpg\" alt=\"Esta receta de patatas a lo pobre es f\u00e1cil de hacer pero llena de sabores y texturas. La comida india es una de mis comidas preferidas y muchas recetas empiezan haciendo una infusi\u00f3n de una mezcla de especias en aceite como en esta receta de <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"https:\/\/www.cilantroandcitronella.com\/es\/dhal-de-lentejas-amarillas\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>dhal de lentejas amarillas<\/u><\/a><\/span>.<\/p>\n<p>Tendr\u00eda que ser muy creativa como para conseguir los mismos sabores sin aceite, as\u00ed que por ahora me quedo con mi <em>tadka<\/em> e intento reducir la cantidad de aceite en platos donde no es para nada necesario, como estas patatas a lo pobre!<\/p>\n<p>En vez de fre\u00edr mis patatas en una taza de aceite, las coc\u00ed en 60 ml de caldo de verduras, las mezcl\u00e9 con una selecci\u00f3n de productos mediterr\u00e1neos y las salpiqu\u00e9 con piment\u00f3n.
