La \u00faltima fue esta receta para <u><a href=\"https:\/\/www.cilantroandcitronella.com\/es\/enchiladas-de-boniato-y-frijoles-negros\/\" target=\"_blank\" rel=\"noopener noreferrer\">enchiladas de boniato y frijoles negro<\/a>s<\/u> (pido perd\u00f3n por las fotos, mal\u00edsimas, de los principios del blog!). Boniato y frijoles negros es mi combinaci\u00f3n preferida para las enchiladas, burritos y <a href=\"https:\/\/www.cilantroandcitronella.com\/es\/taquitos-veganos-horneados\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>taquitos<\/u><\/a>, as\u00ed que para qu\u00e9 retocar algo que ya es perfecto? O eso es lo que pensaba.<\/p>\n<p>Las enchiladas son como los tacos: se las puedes rellenar de cualquier cosa as\u00ed que por qu\u00e9 me llev\u00f3 tanto tiempo en ponerme creativa con las enchiladas? Las alubias pintas combinan bien con las especias ahumadas como el piment\u00f3n y el comino, y cuando las cocinas desde seco hasta que est\u00e9n muy blandas, se convierten en una salsa bien cremosa, perfecta para rellenar tus enchiladas sin la necesidad de queso.<\/p>\n<p>Tampoco pongo queso vegano encima de mis enchiladas ya que el queso vegano que se derrite a\u00fan no es f\u00e1cil de comprar en Espa\u00f1a como en mi pa\u00eds, pero la cremosidad del aguacate sirve en su lugar. Si vives en un pa\u00eds donde se puede comprar queso vegano en cualquier supermercado, si\u00e9ntete libre de salpicar tus enchiladas con un poco antes de hornear si quieres.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-5135\" src=\"https:\/\/www.cilantroandcitronella.com\/wp-content\/uploads\/2017\/02\/pinto-bean-enchiladas-photo-2-1360x2040.jpg\" alt=\"Esta receta de enchiladas veganas es muy sustanciosa, con su relleno de alubias pintas ahumadas y picantes cocidas lentamente con espinacas, una salsa para enchiladas casera r\u00e1pida y f\u00e1cil de hacer, y decoradas con cremoso aguacate, cebolla roja y cilantro fresco.\" width=\"1360\" height=\"2040\" \/><\/p>\n<p>Me gusta servir mis enchiladas veganas con <em>Spanish rice<\/em>, lo que es el acompa\u00f1amiento t\u00edpico para las enchiladas en Canad\u00e1 y los EEUU, pero creo que (a pesar de su nombre) el \u201carroz espa\u00f1ol\u201d no es un plato conocido en Espa\u00f1a. Es un arroz que se tuesta primero y luego e cuece con tomate, parecido a la base de arroz que utilic\u00e9 para hacer mi <a href=\"https:\/\/www.cilantroandcitronella.com\/es\/burrito-vegano-en-bol\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>burrito en bol<\/u><\/a>. Puedes aprovechar el tiempo de cocci\u00f3n de las alubias para preparar este tipo de acompa\u00f1amiento, si quieres.<\/p>\n<p>Una vez las alubias est\u00e9n cocidas, el resto del plato se hace r\u00e1pido. Simplemente hacer una salsa r\u00e1pida para enchiladas en una licuadora: ingredientes simples y unas especias clave, rellenar tus tortillas con el relleno de alubias y espinacas, enrollarlas, verter la salsa encima y hornear durante unos vente minutos. Cuando est\u00e9 listo para servir, decorar con los toppings y ya esta!
