Poco despu\u00e9s de publicar mi receta de <a href=\"https:\/\/www.cilantroandcitronella.com\/es\/jambalaya-vegetariana\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>jambalaya vegetariana<\/u><\/a> se convirti\u00f3 en la receta m\u00e1s vista del blog seguida de cerca de mi <a href=\"https:\/\/www.cilantroandcitronella.com\/es\/sopa-gumbo-vegetariana\/\" target=\"_blank\" rel=\"noopener noreferrer\"><u>sopa gumbo vegetariana<\/u><\/a>\u00a0en segundo lugar.<\/p>\n<p>As\u00ed que vuelvo con otro cl\u00e1sico de la cocina de Luisiana: <em>red beans and rice<\/em> o frijoles rojos y arroz. Si no conoces los frijoles rojos y arroz, no es tan sencillo como el nombre indica \u2013 normalmente est\u00e1 cargado de productos porcinos. Por eso tenemos que hacer una versi\u00f3n vegana!<\/p>\n<p>Mientras que la mayor\u00eda de las recetas por internet para v<em>egan red beans and rice<\/em> simplemente dejan fuera la carne, yo decid\u00ed reemplazarla por setas para darle a este plato una textura m\u00e1s carnosa. Por eso a\u00f1ad\u00ed vinagre de arroz a las g\u00edrgolas y una cucharadita de vinagre de vino tinto a las alubias. El sabor ahumado y picante del jam\u00f3n tasso es bastante f\u00e1cil de reproducir a\u00f1adiendo piment\u00f3n y cayena \u00a0a los frijoles.<\/p>\n<p>Decid\u00ed no reemplazar toda la grasa que este plato suele llevar gracias a la carne, haciendo de este plato un plato realmente saludable y sabroso. No son f\u00e1ciles de encontrar fuera de Luisiana as\u00ed que cualquier otra marca de frijoles rojos peque\u00f1os es v\u00e1lida.<\/p>\n<p>Ojo, los frijoles rojos t\u00edpicos de los supermercados no son lo mismo que los frijoles rojos peque\u00f1os! Yo los compro en un peque\u00f1o supermercado especializado en productos de Am\u00e9rica Latina (si vives en Barcelona te puedo dar la direcci\u00f3n). Sin embargo, hay algunas personas que hacen frijoles rojos y arroz con los t\u00edpicos del supermercado si no encuentran los peque\u00f1os, aunque la textura y el sabor son diferentes.<\/p>\n<div
