Me gusta llamar al falafel, al hummus y al baba ganoush, \u201cvegan 101\u201d, ya que son simples de hacer y certeramente ubicuos en las cartas de pr\u00e1cticamente cualquier restaurante vegetariano de la cuidad donde vivo.<\/p>\n<p>A pesar de eso, no hay ning\u00fan restaurante que haga una receta de falafel tan rica como la m\u00eda. Es claramente el falafel m\u00e1s rico que jam\u00e1s com\u00ed, de veras. El truco es planear con antelaci\u00f3n remojando los garbanzos secos durante la noche. Son ellos los que te dan una textura que es super crujiente y tierna sin ser pastosa a la vez.<\/p>\n<p>Estoy segura de que al menos uno de vosotros me preguntar\u00e1 si se puede hacer esta receta con garbanzos cocidos o de bote. La respuesta es no, as\u00ed que no te molestes en preguntar. Para esta receta de falafel los garbanzos secos son imprescindibles para la textura. Parecer\u00eda m\u00e1s conveniente utilizar este tipo de producto pero en realidad, la mezcla b\u00e1sica para falafel es tan f\u00e1cil que no hay excusa para no hacerla casera.<\/p>\n<p>Simplemente echar los garbanzos, hierbas y especias en un procesador de alimentos y procesar. Puedes dejar volar tu creatividad aqu\u00ed con las especias que a\u00f1adas (vi muchas recetas de falafel muy creativas!). Luego simplemente necesitas formar las pelotas y fre\u00edrlas hasta que est\u00e9n doradas y crujientes. Esto es simplemente una mezcla de yogurt de soja o de coco, pepino rayado, ajo, eneldo, sal y lim\u00f3n.
