The recipe is correct. It wouldn't make sense to bake just 1/2 teaspoon of baking soda so I bake 1/2 cup and save the rest for the next time I make ramen.

Claire, it turns the sodium bicarbonate in the baking soda into sodium carbonate, which is more alkaline than the original chemical.
