Another option to baking the baking soda to turn it into sodium carbonate, why not just buy a box of Arm and Hammer Washing Soda (or other brand). It is already what you want - sodium carbonate.

Today I found lye water in the store. Can I just replace the water-baking soda mix or does the recipe change?

In reply to Amy Miller. The recipe is correct. It wouldn't make sense to bake just 1/2 teaspoon of baking soda so I bake 1/2 cup and save the rest for the next time I make ramen.

I think the quantity of baking soda in the recipe should be 1/2 teaspoon not 1/2 cup, correct? Your notes before the recipe say to add a teaspoon of the baked baking soda to the flour...

In reply to Claire. Claire, it turns the sodium bicarbonate in the baking soda into sodium carbonate, which is more alkaline than the original chemical.
