I have made this cake 5 times in the last two months for special gatherings, first for our gourmet dinner club and just this past weekend for a Portuguese meal. It is delicious, easy, and unique. It goes well with Oatley vanilla in addition to a fortified wine. Delicious!

Made it, it was so easy, first time using aquafaba and it whipped up nicely, but deflated completely before I even finished folding, not sure if that’s normal, but it was absolutely delicious, so moist and with a chewy/crusty/caramelised crust! Never had the original, so can’t compare I’m afraid!

What a fantastic recipe! A friend of mine has just come back from Spain after living there for a year. He decided to have a Spanish party, which was yesterday and I made this cake. Bear in mind that I have never tried this cake, but I thought it looked traditional enough to do the trick. A Spanish guest said that the flavour was perfect and one of the kids described it a magical. I took a bottle of Muscatel to pour some over each slice (Only adults of course), which made the whole thing more exotic. I also used a stencil to decorate the cake with the St James cross. Thanks to Melissa, everyone at the party thinks I am some great cook. I found the recipe really easy to follow and Melissa's hard work in veganising the recipe is highly commendable.

Incidentally, I used spelt flour instead of white and I used xylitol instead of sugar, although, I used icing sugar for decoration and I ground raw almonds in a coffee grinder. I can't believe how the cake was such a hit! Thanks.

I want to try this recipe, just recently a Spanish friend taught me how to make her dad's almond cake but wasn't a vegan recipe... If I have almond flour, how much of it should I use? Thanks!

I love Spanish almond cake. For my birthday I was looking for a cake recipe and found this. Made it yesterday and everyone loved it! Right now I am eating the last little slice. Will make it again. It was absolutely delicious!! So good! Thank you so much! My new favorite cake recipe
