This is why most people will divide dough into small sections and hand roll each one--doesn't take long and you get good control, making thin edges. Your potstickers look very pretty and your method is fast, just hand roll the edges a little thinner.

Freeze separated on parchment paper lined- or silicone lined baking sheet. Once frozen you can transfer to a ziplock freezer bag.

I know its not the traditional way to pleat Asian potstickers, but I find if I press the edges with a fork (of any filled dumpling or pastry) it not only helps them seal better but it also flattens the doubled-up edges enough that they cook more evenly.
