These Spanish spinach croquettes are a typical tapa in bars all around Spain. They’re simple to make, packed with flavour and make a great vegan party finger food or appetizer!

Spanish Spinach Croquettes

La olivada es un paté de aceitunas parecido a la tapenade francesa. Se puede hacer con aceitunas verdes o negras, suave o grueso, e integrar otros ingredientes mediterráneos. Es muy rápido y fácil de preparar y queda genial servido de tapa o picoteo durante una fiesta, encima de pan tostado y con esferas de caviar de vinagre.

Olivada: Spanish Olive Pate

Esta receta de patatas a lo pobre es fácil de hacer pero llena de sabores y texturas. Este plato es sencillo y se puede servir de tapa, almuerzo ligero o de acompañamiento. Las patatas se suelen freír en abundante aceite, pero mi versión va sin aceite, ya que las patatas están cocidas al vapor con caldo de verduras, pimentón ahumado, vinagre de vino tinto y hierbas frescas.

Here's a recipe for another uber-typical Spanish tapa: ensaladilla rusa or vegan Russian salad. It's a very easy potato salad that will most definitely find in any and all bars serving tapas in Barcelona. However, you'd be hard-pressed to find a vegan version of ensaladilla rusa, as it usually contains tuna and always mayonnaise. Luckily, the tuna is not essential and the mayonnaise is easy to veganize so here's my version of vegan ensaladilla rusa.
