🇪🇸 Sopa vietnamita pho vegana

Ingredientes para el caldo:
1 cebolla
8 cm de jengibre
3 anís estrellado
3 clavos
2 canella
1 cucharadita de coriandro (semillas de cilantro)
5 dientes de ajo
700 gramos de verduras para caldo
3 setas shiitake secos
3 litros de agua
1 1/2 cucharadas de Maggi o salsa de soja (o al gusto)
1 1/2 cucharaditas de sal (o al gusto)

Ingredientes para la sopa:
2 a 3 cucharadas de aceite
200 gramos de tofu extra-duro machacado
2 cucharadas de salsa de soja
1 cucharadita de miso
1 cucharadita de vinagre de arroz
1 cucharadita de pimentón
1 cabeza de pak choi, hojas separadas
250 gramos de fideos de arroz
200 gramos de brotes de soja
cilantro o albahaca thai fresco
3 cebolletas, cortadas
1 chili picante, cortado
1 lima

Instrucciones:
Carbonizar la cebolla y jengibre. Añadir las especias y freír 2 - 3 minutos. Añadir el ajo, verduras, shiitake y agua. Hervir a fuego lento durante 45 minutos. Escurrir y añadir Maggi o salsa de soja y sal al gusto.

Freir el tofu. Mezclar la salsa de soja, vinagre, miso y pimentón. Añadir al tofu. Hervir el pak choi y los fideos de arroz. Escurrir y lavar los fideos con agua fría. 
Servir los fideos en 4 bols, añadir el caldo, pak choi, brotes de soja, tofu, cilantro, cebolleta, chili y jugo de lima.

🇪🇸 Ensalada de orzo con verduras asadas
Asar unos 500 gramos de verduras de temporada (coles de Bruselas y calabaza en este caso). Tostar 200 gramos de orzo en una sartén con aceite de oliva y 2 dientes de ajo. Añadir 500 ml de caldo de verduras y hervir a fuego lento durante unos 10 minutos. Hacer una vinagreta con 2 cdas aceite, 2 cdas jugo de limón, 2 cdtas agave, 1/2 cdtas Dijon, y sal. Mezclar todo y servir!

🇪🇸 Caracoles de Hojaldre con Pesto Rojo de Tomates Secos (para tu proxima fiesta)

Ingredients:
75 gramos de almendras crudas
145 gramos de tomates secos
1 diente de ajo
10 hojas de albahaca
Sal y pimienta
2 - 3 cucharadas de aceite de los tomates secos (al gusto)
1 masa de hojaldre vegana

Instrucciones: 
Tostar las almendras.

Procesar las almendras, tomates, ajo, albahaca, sal, pimienta y aceite.

Untar la masa con el pesto, enrollar y congelar durante 30 minutos.

Precalentar el horno a 200 C.

Cortar en piezas de 0.5 a 1 cm.

Hornear durante 20 minutos o hasta que esten dorados.

Tostar las almendras y utilizar un procesador de alimentos para hacer el pesto con las almendras, tomates, ajo, albahaca, sal, pimienta y aceite al gusto. Untar en la masa y enrollar. Envolver en plástico y congelar 30 minutos. Calentar el horno a 200°C. Cortar piezas de .5 a 1 cm y colocar en una bandeja forrada con papel de horno. Hornear unos 20 minutos.

  • If you've been to Spain then surely you know the Spanish omelete or tortilla de patatas. Now it's vegan!

Ingredients:
1 cup (120 grams) chickpea flour
1 cup (240 ml) water
1 teaspoon salt
A few grinds of pepper
1 onion, diced
4 cloves of garlic, thinly sliced
3 medium potatoes (about 450 grams / 16 oz), peeled and sliced
Oil, for frying
Optional add-ins: Black salt (kala namak), sliced and fried green pepper, sliced zucchini, chopped tomato, etc.

Instructions:
Combine the chickpea flour, water, salt and pepper and stir well to remove the lumps. Heat a bit of oil over medium-high heat and sautee the onions and garlic til soft. Remove from the pan to a plate. Add an inch or so of oil to the pan and fry the potatoes until soft but not brown. Add the onion, garlic and potatoes to the chickpea flour batter and stir. Lightly oil a medium-sized pan over medium heat and pour in the batter. Cover and cook for 5 minutes until the bottom is browned. Put a plate over the pan and flip the omelette over. Return it to the pan, cover and cook for a further 5 minutes until browned on the bottom. Remove from the pan and allow to set for 5 minutes before slicing and serving.

Ingredientes:
120 gramos de harina de garbanzo
240 ml de agua
1 cucharadita de sal
Pimienta, al gusto
1 cebolla, picada
4 dientes de ajo, cortados (opcional, si te gusta)
3 patatas medianas (unos 450 gramos), peladas y cortadas
Aceite de olive, para freír
Opcional: Sal negra (kala namak), pimiento verde, calabacín, tomate, etc.
